This, my friends, is what we’ve been leading up to all week. And, WHAT better main dish to combine with all our healthy sides than lean, flavorful protein with BEER SAUCE? Beer Sauce! They are so easy to make and you can top them however you like!
You’ll need tortillas – small flour tortillas work best so people can make several different tacos with all the topping options!
To warm them, I wrap them in a dishtowel sprinkled with JUST A LITTLE water and microwave them for 30 seconds, repeating as needed to heat them through so they’ll be soft and pliable.
For the fish, plan on about 1/2 filet per person. I used cod, but any firm white fish is great! I season the fish with cumin, chili powder, and salt.
Heat a pan to medium-high with some olive oil or cooking spray, then grill the fish on the first side until the edges turn white, about 5 minutes.
If the pan is nice and hot the fish will be very crispy and moist on the inside – yum! Once you can see white on the edges of the fish, flip it and cook it for 2 or 3 minutes until completely cooked through.
Then, remove the cooked fish to a plate and let it cool for a few minutes, then break it up with a fork into large crumbles.
Doesn’t this look delicious? The sauce is even easier! To the same pan, add one beer and stir, scraping any bits from the bottom of the pan and letting the beer reduce by half.
Once the beer has reduced for a minute or two, stir in one small can of green chilies with their juices.
Then, stir in 1/2 cup sour cream or Mexican crema and a sprinkle of salt.
And that’s it! Creamy, delicious, and easy. I serve this meal buffet-style so people can make whatever incarnations of tacos they’d like – it’s always a crowd pleaser!
