We ARE, however, abstaining from eating meat for the next 30 days for an addictions class I’m taking. We contemplated giving up alcohol for about 5 seconds but realized we didn’t want to break up when I started getting she shakes so…

That’s my reaction to yummy gooey spicy rice, anyway.
I made this a few weeks ago when my grandfather generously gifted me about 837 servings of kale from his garden. I made braised kale like I did at thanksgiving one night, and then made this risotto with the rest.
It was delicious!
One of my favorite pasta dishes is SO simple and perfect for this time of year. If you’re having a hard time figuring out what to make tonight, why not make this delicious sage-prosciutto pasta?
The picture above has the pasta with fish, but I’d make it even healthier by omitting a big protein (we all eat too much anyway in this country) and adding a salad or roasted broccoli. Easy, delicious, and healthy. Perfect for a Thursday!
I’ve seen on TV lots of recipes that make a fake-creamy sauce by puree-ing squash, parsnip, or potato and had been wanting to use that method for awhile. It worked really well, and the flavor combination in this particular dish was very very lovely.
It was easy too, duh. I don’t do hard stuff.

Well, here it does. It’s sunny and is almost 65 degrees!
That makes me happy. It also makes me want to eat vegetables! Cold weather makes it SO tempting to eat mac and cheese and pot roast (no, just me?) every day, but starting a meal with a salad with actual veggies on it (sorry, Caesar salad isn’t what I have in mind) and a light dressing kiiiiiind of makes up for some of the other caloric errors one might make at this time of year!
