Remember awhile ago when we talked about how great it was to find a carb, veggie, and protein and stack them on top of each other and call it dinner?
That was a good day.
It’s still one of my favorite ways to have dinner, as you’ve seen several times!
If you’re stumped on what to eat tonight, here are a few ideas for a pretty layered dinner that won’t take tons of time to toss together.
- Mexican: Saute peppers, onions, and any other veggies you’d like in a hot pan with some olive oil and a sprinkle of salt and chili powder for 4 minutes. Microwave a tortilla for 10 seconds. Lay it on a plate. Top tortilla with refried beans, saute’d veggies, grated cheese, and any other Mexican-style toppings of your choice.
- Your choice pasta cooked and tossed with a pat of butter and sprinkle of parm, topped with a saute’d dark green veggie, topped with grilled fish. Sprinkle everything with more cheese, toasted nuts, or chopped herbs.
- Bruschetta: Toast some bread. Lay it on a plate. Top with chopped tomato, fresh mozzarella, and fresh spinach. Drizzle with olive oil, balsamic, and sprinkle with salt and pepper.
- Buffalo Chicken: Prick a potato and microwave it on high for 5-10 minutes until soft. Meanwhile, grill some chicken with salt and pepper in a hot pan or on a grill. Let the potato cool, then slice and spread it on a plate. Top potato with salt, pepper, and butter. Thinly slice the cooked chicken and sprinkle the whole plate with Texas Pete, Tobasco, or any other hot sauce. Top with lots of chopped celery and crumbled bleu cheese, if you’d like.
