I’d like to suggest to you this evening that you make a big salad for dinner. I do this about once a week, and it’s a great way to use up veggies in your fridge and eat something quick, easy, and healthy!
First, make a big batch of tuna salad. Use all the herbs you can get your hands on, and make extras to have for lunches this week!
Now, that can all be done ahead of time, minus cooking the garlic bread. When you’re ready to eat, pop the garlic bread in the oven while you cut up any and all veggies that you’d like for a salad! You can use lots of different things or just one green – my favorite is arugula!
Once your veggies are ready, drizzle your salad with some of the dressing, then plop a scoop of tuna salad on top of the whole thing, and serve with the garlic bread.
