It’s warm here again today!

That means that in approximately 4 minutes people will be wearing bathing suits and I’ll be feeling fat.

I’m hoping that’s just me.  But, if it’s not, here’s a GREAT way to reduce some calories from your mashed potatoes!

Click here for the original recipe – they’re good, man!

After you read that, follow the following steps to reduce fat and calories – they’ll still taste amazing, I promise!

  • Use 2% or skim milk instead of half and half or whole milk
  • Use reduced fat sour cream
  • Start with 2 tablespoons butter and add more at the end if you need to
  • THE KICKER: Don’t use all potatoes.  Use 4 potatoes and half a head of cauliflower:  boil the potatoes for about 5 minutes and then add the cauliflower, cut into big chunks.  Boil the potatoes and cauliflower together until they’re done, then drain, season, and mash according to the recipe.

Whoa.  Genius, and still delicious.  Check out the recipes page for some other mashed potato variations, and use the cauliflower swap in all of them!
