I’m hoping that’s just me. But, if it’s not, here’s a GREAT way to reduce some calories from your mashed potatoes!

After you read that, follow the following steps to reduce fat and calories – they’ll still taste amazing, I promise!
- Use 2% or skim milk instead of half and half or whole milk
- Use reduced fat sour cream
- Start with 2 tablespoons butter and add more at the end if you need to
- THE KICKER: Don’t use all potatoes. Use 4 potatoes and half a head of cauliflower: boil the potatoes for about 5 minutes and then add the cauliflower, cut into big chunks. Boil the potatoes and cauliflower together until they’re done, then drain, season, and mash according to the recipe.
