I made chili a few weeks ago on a weekend to eat throughout the week, and one night Jay made these delicious corn muffins to go with it.

The mix is regular old less-than-a-dollar Jiffy, but the add-ins are what makes it really special!  You can add ANYTHING you like to a baking mix like this to change it up and make it your own!

 

Jay prepared all the ingredients as normal but added a few tex-mex style flavors that REALLY added to the muffins.  He used:

  • 2 tablespoons diced, drained pickled jalapenos
  • 1 teaspoon paprika
  • 2 tablespoons honey

Then he just stirred the batter together and plopped it in a muffin tin, just like the box said.  He got more than the regular 6 muffins out of the mix, too!

These were super delicious and amazing; the vinegary taste of the jalapenos was a perfect addition to the sweetness of the corn and honey.  You could add a little sharp grated cheddar, too!
