Alert – this is the last stupidly easy thing we’ll need to complete our dinner for this weekend, minus the main dish! So far we’ve made tons of easy, healthy, fresh side dishes, and this one is no different!
This is another one that can be tossed together SO quickly and is great for parties, appetizers, or to keep around for a healthy dipping option!
Peach Pico De Gallo
For this salsa, you’ll need:
- 1/2 hot pepper (I had a red jalapeno)
- 1 cup canned or fresh peaches
- 1/2 small onion
- 1 large or 2 small tomatoes
- 1 tablespoon cilantro
- 1 tablespoon lime juice
- salt
Dice the onion very finely…
And, add the lime juice. I had only the bottled stuff and it worked great! If you like a sweeter pico, add a splash of the peach juice too – yum!
Then, add the cilantro and a light sprinkle of salt.
Stir it all together, taste it, and you’re all set! This is easy and delicious and could be used as part of a chip and dip bar at your next fiesta!
